Easter Bunny Cake

As we all know and heard for many years “Chocolate is not good for you”. But recently studies have shown that chocolate has the same and potentially more antioxiadants than tea. So having said that, one we go with our Easter Bunny Cake.

This is a double chocolate Easter bunny cake, meaning that both the cake and the frosting are chocolate.  For this you will need to use your round layer cake pan.

Additionally, you will need the following:

-jelly beans

-coconut

-malted milk eggs (the large ones that come in a variety of colors)

-2 wafer cookies (for the ears)

Cake

-1 (one) cup sugar

-1 1/2 cups flour

-1/3 cup cocoa

-1 (one) teaspoon baking powder

-3/4 cup milk

-1/2 teaspoon salt

-1/2 cup cooking oil

-1 (one) teaspoon vanilla

-1 (one) egg

All ingredients must be measured into a medium sized bowl.  You must use an electric mixer and blend the ingredients at a low speed for aprox. one minute.  Scrape the bowl at the same time of blending.  Then beat at hig speed for two to three minutes, occasionally scraping the bowl.  For 35 to 40 minutes bake at 350 degrees in a floured and greased round layer cake pan. Then allow the cake to cool off completely before you remove it from the pan.

Frosting

-3 (three) cups powdered sugar

-1/4 (a quarter) cup plus 1 (one) tablespoon cocoa

-1/4 (a quarter) cup milk

-6 (six) tablespoons of butter, softened (or if prefered margarine)

Measure all ingredients into a medium-sized mixing bowl. Blend at low speed for 1 minute. Scrape the bowl while blending. Beat at high speed for 2 to 3 minutes, scraping occasionally. If frosting seems too stiff, add milk by the teaspoon until the frosting reaches the desired consistency. If the frosting seems too thin, add powdered sugar by the tablespoon until the frosting reaches the desired consistency.
How to Make Your Chocolate Easter Bunny Cake

Remove the cake from the cake pan. Cut in half horizonatally. Frost the flat side of one half and put the two pieces together. Then place on a large plate or platter, cut side down.

Add chocolate frosting to the cake.

Place two jelly beans for the eyes of the bunny and one jelly bean will be used for the nose. Then use a large malted milk egg for the tail.

Take a sharp knife and cut a hole on each side of the head where you would like to place the ears. To make the ears, trim a wafer cookie using a sharp knife. Shape them into bunny ears. Add frosting to the ears. Put a little frosting into the holes so you can anchor the ears.

Then sprinkle some coconut around the cake and decorate with plenty of malted milk eggs and jelly beans.
